30 minute meal (no, not by Rachel Ray)

Am on a mission to change up my meal menu and also to open up N's culinary world.  And so, took 30 minutes to whip up something different last evening.  Dinner menu: Thai style veggie soup, Mediterranean multi-grain bread, and roasted broccoli with sunflower seeds on the side.

Procedure: Saute finely chopped onion, garlic and ginger in heated olive oil.  Add chopped spinach and saute. Pinch of sea salt and pepper.  Add cherry tomatoes cut in half, grated carrot and peas.  Saute. Add vegetable stock.  Pinch of turmeric. When it boils, add a half cup of milk to which you've added a tablespoon of coconut milk powder.  Stir in.  The mixture is now creamy.  Add a little more milk.  Now for the secret ingredient - a couple of pinches of maggi noodle masala (ok, I know, but trust me, the result was awesome).  Boil for a few minutes on low flame.  Done.

Toast slices of Mediterranean multi grain bread.  Add butter.  Done.

Break broccoli into little florets.  Place on baking sheet. Drizzle olive oil.  Sprinkle sea salt and pepper.  Dunk into 400 degree oven for 10 minutes.  Bring out tray, add sunflower seeds. Back in oven for 5 more minutes until slight browning of florets and seeds.  Done.

Couldn't have asked for a more delicious or healthier dinner.  N has to be the only kid in the country who laps up spinach and broccoli enthusiastically.  Enough said about that.  I certainly don't want to jinx it in any way.
